Fettucini Carbonara

Cooking

This is a very popular recipe wherever it goes. Caloric objectors are asked to try before condemning!

Take a pound of bacon and cut into small pieces then toss into a skillet and cook over medium heat. Start a large pot of water boiling and once it is boiling add about six servings worth of dry fettucini. As the fettucini and the bacon are cooking away mix gently together a cup and a half of heavy cream with five egg yolks and a teaspoon or two of cracked pepper. As soon as the bacon is tender but not yet crisp, turn it off and drain most but not all of the fat off. As soon as the fettucini is cooked (throw a piece against the wall, if it sticks, it’s done) drain it and dump the bacon and fat in on top of it. After a quick stir add the cream mixture and about 2/3 of a cup of grated parmesan. Mix gently and serve with a little more parmesan for garnish. Try to hoard back a serving or two since this is REALLY GOOD warmed up the next day.

    This recipe is amazing!! I made it tonight and instead of fettucini i used ziti. I added some cut up chicken breast that i cooked with applewood bacon. VERY TASTY!!! I added an extra 1/2 cup of cream and a little more cheese and it was so good! Amazing recipe. I'll definitely make this one again.
