		<description>You make a very good point! Of course with very high levels of cacao (75% or more) it is not difficult to keep your wine sweeter than your chocolate. </description>

		<description>Just a side note: when pairing chocolate with red (or any) wine, make sure the wine is as sweet, if not a little sweeter, than the chocolate. Otherwise the sweetness of the chocolate, no matter how dark, will only bring out a bitter taste in the wine.  And to mar the experience of a fabulous, full-bodied red wine with a piece of oh-so-inferior chocolate is a travesty.  A major oenophilic no-no. :-) </description>
